Why booktabs
Booktabs draws three horizontal rules of different weights and no vertical rules at all. Almost every journal template expects that, and typographers have argued for decades that vertical rules in a table are noise the eye has to work past.
It needs \usepackage{booktabs} in your preamble. Turn the option off and the output uses \hline instead, which is built in and needs nothing.
Escaping
Seven characters mean something to LaTeX and have to be escaped in a cell: ampersand, percent, dollar, hash, underscore and both braces. An unescaped percent comments out the rest of the line, which is the usual reason a pasted table stops compiling halfway through.
All seven are escaped in the output here, so a value like 50% or R&D compiles as written.
Caption and label
Fill in a caption and the tabular is wrapped in a table float with \centering, which is what lets LaTeX move it to the top of a page. Add a label and you can reference it as Table~\ref{your-label} from anywhere in the document.
